Cranberry Waldorf Salad annually graces the Darlington family's Thanksgiving table. For more than an decade, Martha B. Darlington, wife of fomer Pinelands Commissioner Thomas B. Darlington and Chairperson of Burlington County's Library Commission, has prepared this delicious complement to the family's main course. Mother of four and grandmother of six, Mrs. Darlington attested to the popularity of this dish, a salad that not only enhances the holiday turkey, but can be eaten as a dessert or a between meal snack.
A self-trained horticulturist, Mrs. Darlington had overseen the landscaping of the family's New Lisbon home, a site that has been part of the family's property for several generations.
Unfortunately Martha passed away in 2005 she will be greatly missed by all who had the pleasure to know her.

cups tart apples - diced, unpared |

cups grapes - seedless whole or seedless halves |

cup walnuts - coarsely chopped |

cup heavy cream - whipped |

| Day before: Grind cranberries and mix with marshmallows and sugar. Refrigerate. |
| Shortly before serving: Add fruit and fold in whipped cream. |
